


This year’s National Day is extra special: Singapore’s 60th anniversary, or SG60, is a diamond jubilee that everyone’s celebrating this month. Weeks of fireworks over Marina Bay mean weeks of celebration: viewing parties, bottles and live music in every sky-high lounge and rooftop bar in the city centre. They are the C.O.T.U. Singapore Sling, a take on the classic cocktail infused with raspberry eau de vie and pineapple cherry; the Merlion Collins, a vibrant, tart blend of fermented pineapple and roselle; the SG60 with Glenfiddich 12, sake and lemongrass; and the Red Dot, a crisp floral cocktail with elderflower, citrus and raspberry.

Grand Copthorne Waterfront Hotel Singapore – The Much-Loved Durian Buffet Returns This National Day
The Grand Copthorne Waterfront Hotel’s Durian Buffet returns this National Day at Food Capital from 14 July to 14 September, with freshly-cut, free-flow Musang King durian and an array of dishes you’d never imagine durian to feature in. The Gratin Parmigiana Durian, Durian Laksa, and Durian Gula Melaka Kueh Dadar join a live dessert station, with SG60-exclusive durian ice cream creations by local ice cream brand Udders.
You’ll have Kampung-Style Durian Fried Rice, Roasted Chicken with Durian Glaze, and Durian Quiche to look forward to, as well as a selection of durian desserts: Durian Sweet Potato Tartlets, Durian Panna Cotta, Mini Durian Cream Puffs and more. Udders’ durian ice cream flavours, which will be launched at the buffet and served on a rotation, include the Durian Cheesecake, Durian Pengat and Emperor Mao ice cream, made with 54% pure Musang King durian.
From August 8 to 10, Food Capital will roll out a SG60 National Day-themed buffet, which presents both local favourites and modern creations against red-and-white decor. The Singapore Chili Crab with Mantou, Black Pepper Slipper Lobster, Salted Egg Yolk Prawns and Crispy Whole Garoupa with Kiam Hiong Sauce appear alongside inventive dishes like the Hainanese Chicken Rice Risotto. Desserts include Nyonya delicacies like assorted kueh and Chendol, Pulut Hitam with Mata Kuching, and the crowd-favourite Bird’s Nest Egg Tart.

Fullerton Hotel – Town Restaurant Celebrates Singapore’s Beloved Street Food This National Day
The Fullerton Hotel and Fullerton Bay Hotel celebrate Singapore’s 60th anniversary this year with themed restaurant menus and special cakes from the Fullerton Cake Boutique. On 9 August itself, both the Lighthouse and Clifford Pier will open their doors for live screenings of the National Day Parade, live band performances, and dazzling views of the fireworks display.
From 1 July to 30 August, Town Restaurant at the Fullerton Hotel presents Hawker Feast by the River, a dinner buffet featuring renowned street food chefs from all corners of Singapore. These seven guest hawker shops include the Michelin Bib Gourmand-recognised Da Shi Jia Big Prawn Mee, Good Chance Popiah, Hougang Otah, the famous Springleaf Prata Place, Annie’s Peanut Ice Kacang, and more alongside fresh seafood and roast meats. LeVeL33 – A Cacao-Themed Culinary Tribute This National Day
Another collaboration with Janice Wong sees her teaming up with LeVeL33’s Executive Chef Jake Kowalewski for a cacao-fuelled culinary tribute to Singapore. LeVeL33 is currently recognised by the Guinness World Records as the world’s highest urban microbrewery: just the place for cutting-edge craftsmanship and creativity to take shape. At the one-night-only SG60 National Day Cacao Experience (9 August), Chef Jake’s innovative produce-forward dishes meet Chef Janice’s visionary talent and expertise in dessert-making.
At this experience, guests are invited to freely sample dishes against the backdrop of National Day fireworks: designed as a free-roaming, immersive tasting journey, the event features live stations, canapes and interactive plating. The dishes include Chocolate Aged Wagyu Beef, with Pure Bean To Bar by Janice Wong 52% Indonesia Single Origin Coconut Curry Milk Chocolate, served with cacao and chili soy glaze, crispy garlic and smoked tofu puree. A Spent Grain Pasta is served in a laksa emulsion with grilled tiger prawns, and Chocolate and Stout Char Siu is accompanied by steamed buns and pickled cucumber salad.
The experience will also feature an edible dessert installation created by Chef Janice, with a quartet of imaginative desserts: Chocolate Bon Bons flavoured with chili padi and chendol, and the Chocolate Water Rock: red fruit beer sorbet with soy sauce caramel and coffee chocolate soil. Fairmont Singapore – Celebrate SG60 With An Afternoon Tea Inspired By Local Artists
ANTI:DOTE at Fairmont Singapore collaborates with Singaporean visual artist Yip Yew Chong on a new afternoon tea set that celebrates history and culture. “Flavours of Singapore: Through The Art of Yip Yew Chong” is available from 2 July to 30 September, daily from 3pm to 5pm and additionally on weekends from 12pm to 2pm, and priced at $68++ per adult (inclusive of two non-alcoholic beverages) and $34++ per child aged 6 to 12. This tea set is Yip’s second collaboration with Fairmont Singapore following the 2023 exhibition of his work “I Paint My Singapore”: a 60-metre painting comprising 27 interconnected scenes that depict Singapore’s history.
To create this menu, Executive Pastry Chef Yong Ming Choong and Chef de Cuisine Jacky Lai have worked closely with Yip to bring the sights and sounds of Singapore to the table. Five dishes make up the “savoury” tier: smoked duck with spring onion and hoisin, chicken satay with ketupat and peanut, Barramundi Fish Curry with okra and trout roe, Boston Lobster with laksa jelly and caviar, and a miniature Chicken Stew. The “sweet” tier reimagines old-school desserts like orh nee and putu piring, miniature kueh salat, and desserts inspired by “Egg Toast” and “Kopi and Tea”.
New head mixologist at ANTI:DOTE Edu Zamora has created two drinks to accompany the tea: Cendol Sunrise, a refreshing mocktail flavoured with red bean syrup, coconut water, and pandan air foam; and Whispers of the Alley, with No.3 London Dry Gin, coconut-washed aperol pandan, banana liqueur, pedro ximenez and coconut water.
