Ricciotti's New Menu is Giving Classic Italian Food a Unique Twist
Known for providing a complete Italian gastronomic experience, dining at Ricciotti is akin to having an authentic Italian dinner party. Overlooking the river, Ricciotti sits along Boat Quay, providing an intimate setting in the evening where food, passion and life comes alive in this cozy restaurant.
Currently helmed by Chef Matteo, Ricciotti has revamped its dinner menu to embrace traditional recipes with modern techniques, representing loved recipes from both Northern and Southern parts of Italy with a twist.
Chef Matteo is a graduate of the culinary school “Collegio De Filippi” in Arona, (Piedmont, North of Italy) and began his culinary journey by working at differente Michelin Star and Traditional restaurants during his academic years. At age 20, Chef Matteo had the opportunity to manage his first Kitchen in a small Boutique Hotel on the beautiful mountain of Mount Rosa. It was here that he started applying his creativity by evolving traditional recipe in modern context, with innovative technique and presentation. In 2014, he came to Singapore to work in Il Lido in Sentosa and then move to Aura in National Gallery and finally joined the Ricciotti family in April this year.
Chef Matteo’s approach to food is commendable –fresh ingredients are flown in from Italy twice a week to ensure the best quality, while Pastas and Breads are produced in-house once every day.
We had the opportunity to taste Chef Matteo’s signature dishes, which include classic appetisers like Polpo e Burrata (one of Ricciotti’s finely plated dishes) consisting of perfectly Grilled Octopus, creamy Burrata Cheese, Roasted Cherry Tomato Pesto and Crispy Celery. Do also try the Carpaccio di Manzo (Argentine Beef Carpaccio, 25 Years Aged Balsamic Dressing, Parmesan Cheese, Rocket Salad).
Mains include Ravioli del Plin – a standout dish for its flavorful sous vide beef Ravioli and porcini mushrooms that sits atop a rich and aromatic truffle and parmesan infused sauce. We also had the opportunity to taste the Sogliola alla Siciliana –a fresh lemon sole-fish gratin smothered with aromatic Bread Crumbs, Heirloom Cauliflower (translate: Purple Cauliflowers) and Tomato Mayo. Overall, dishes are treated with utmost delicacy, with balanced and cohesive flavors, much like a well-tuned orchestra.
Ricciotti’s dessert menu is also revamped, with authentic additions like the Salame di Cioccolato, a decadent Italian Chocolate Salami with Cappuccino Mousse and Delizia al Limone, a soft, light sponge cake with White Chocolate Mousse and Lemon Cream. Do expect classic dessert items like Tiramisu and Soffiato as well.
