On 19 January 2019, Laguna Bintan is presenting the Best of Bintan, which will feature a curated 6-course degustation set dinner. A collaboration by six Head Chefs of the region, this gastronomical experience brings you on a journey of local Indonesian flavours of signature favourites from the Riau Island.
Tapping into an array of expertise and skills, Best of Bintan features Head Chefs from six resorts including Banyan Tree Bintan, Angsana Bintan, Bintan Lagoon Resort, The Canopi, The Residence Bintan, and Nirwana Gardens.
Kickstart the experience with Otak Otak Ketam, where local mangrove crab meat and fermented shrimp are wrapped in banana leaves and grilled. The second starter features Mie Tarempa, handmade flat noodles stir fried with vegetables and smoked local tuna in red chili paste and soya sauce. This is followed by Iga Sapi Soup, with slow-cooked ribs that are infused in local spices.
The first main course, Samudra Sari Laut, features a steamed and seared red snapper roulade, stuffed with laksa marinated minced prawns and scallop rolled with a nori sheet. The second main course treats you to Na Tinombur where succulent duck fillets are marinated with Andaliman pepper and homemade Kecombrang Chili Salsa.
Ending off on a sweet note, Bintan Fantasy offers an aromatic treat with a steamed pandan layer cake, complemented with a quenelle of homemade jackfruit ice cream and vanilla tuile.
You can also opt for wine pairings to complement the courses with selection of Indonesian wine from Hatten Wines that is specially selected and paired the wine by Ibu Kertawidyawati, President of Indonesia Sommelier Association – Bali Chapter.
